Light is not a technical concern — it is the subject's translator. The same dish photographed under warm tungsten light, cool fluorescent light, and natural daylight becomes, effectively, three different photographs. The food does not change; the light does. For this reason, the Dean places the study of light before any discussion of camera settings: you must understand what you are working with before you can begin to work with it.
