Colour saturation in food photography serves one master: the appetite of the viewer. Over-saturated food photographs are immediately recognisable and immediately untrustworthy — the food looks artificial, the colours aggressive. Under-saturated food photographs are flat and uninviting. The target is accurate saturation: the level of colour richness that corresponds to how the food would appear to an ideal eye, in ideal light, at the moment it looked most beautiful.
