Beyond the Recipe: What a Culinary Ratio Is

399.1 Lesson 01 of 08 3 quiz questions 1 assignment

Welcome to the threshold of the kitchen where recipes end and cooking begins. Up to this point in your culinary study you have gathered a great many variables — selecting fresh ingredients, caring for them after buying, knife skills, measurement, techniques, and cookware. The book calls these the fundamentals that “set a baseline to work, to codify the fundamentals from which we work.” Now we move to the next level, and the tool that carries us there is the culinary ratio. A culinary ratio, the author tells us plainly, is a fixed proportion of one ingredient or ingredients relative to another. They form the backbone of the art of cooking, and they are the very reason this course exists.
