Taken in 2021 while visiting her father down in Devon, England, Nikki always puts on a feast for him usually using freshly bought ingredients from Borough Market in London. A true lover of truffle and artichokes, this board is a foodie’s dream paired with a fine wine and enjoyed during a long overdue catch-up with friends or family.

Nicole Gilmer is a California-born Irish woman who has spent the last eighteen years living in London, England. She has a passion for delicious food, adventurous travel and meeting the amazing people of the world. With a deep-rooted interest in what makes people tick, Nikki obtained a First-Class Theology Degree at The University of Exeter, followed by two Master’s Degrees – one in Global Ethics & Human Values from King’s College London, and one in Investigative Journalism from City University of London. She went on to pursue a career in journalism, while also growing her Instagram account – See: Sip Eat Enjoy – which showcases her love for food, travel and simply enjoying life. The world is a glorious place and her iPhone’s camera roll is her alter to it. Now she works for a marketing agency while also teaching children engineering and electronics in an afterschool club.
