The smell of burnt sugar is a ghost that lives in the back of my throat, sharp and sticky. It brings back the feeling of flour dusting the creases of my knuckles, a fine, cool powder that turns into a heavy paste the moment it meets the dampness of my palms. There is a specific rhythm to the kitchen—the rhythmic thud of a wooden spoon against the side of a bowl, the way the air grows thick and humid with the promise of something cooling on a wire rack. We do not eat only with our mouths; we eat with the memory of heat, the crunch of a nut yielding under the teeth, and the slow, melting surrender of chocolate against the tongue. It is a quiet, private alchemy. When the house is still, the taste of a single bite can pull the entire world back into the center of the chest.
