Taken in Ireland, home to some of the best salmon. Somehow this seems to be the most suitable match for smoked salmon, with sour cream, topped with lemon zest and chives with some cracked pepper. You can taste the smokiness of the salmon, I learnt to make this from a very special French man and it’s stuck with me ever since.

All the ingredients and color came together beautifully and tasted great as well. This photograph deserved a top shot.
