Nicole Gilmer, a California-born Irish woman, has lived in London for the past eighteen years. Passionate about food, travel, and meeting people, she earned a First-Class Theology Degree from the University of Exeter and two Master's Degrees in Global Ethics & Human Values and Investigative Journalism. Nicole works in journalism and runs an Instagram account, See: Sip Eat Enjoy, showcasing her love for food and travel. She also works at a marketing agency and teaches engineering and electronics to children in an afterschool club.
